TRADITIONAL ESTONIAN FOOD

Estonian traditional specialities are for example silgusoust (Baltic sprats with bacon and cream), mulgikapsad (pork with sauerkraut, served boiled potatoes), mulgipuder (groats and potatoes with fried cubes of lardy meat), kilu (Baltic sprat), verivorst (blood sausage and barley), must leib (black bread), sült (boiled pork in aspic jelly), suitsulõhe (smoked salmon), heeringas (Baltic herring served with onion, sour cream and fresh potatoes), kama (flour of barley, oats, rye and peas-meal, mixed with the sour milk).
